Steve Wynn and restaurant impresario Michael Morton will soon open La Cave – A Wine and Food Hideaway nestled inside Wynn Las Vegas. Inspired by the Latin phrase In Vino Veritas (in wine here is truth). La Cave offers an escape where guests can enjoy a menu of modern American small plates from executive chef Bill DeMarco and global wine selections from Danielle Price, our award-winning Executive Director of Wine, and Rober Wright, La Cave’s wine director.
The wines at La Cave reflect Price’s expertise in assembling diverse, complex lists that surprise and please connoisseurs and novices alike.
Guests can sample a 2000 Harlan Estate Bordeaux-blend from Napa Valley, California, a boldly flavored domestic wine, along with other interesting selections such as a 2009 Mollydooker Shiraz Blue Eyed Boy from South Australia. “La Cave’s wine list offers an array of over 250 global selections - encouraging guests to approach wine from a fresh, fun perspective and explore new varietals,” Price says.
Open for lunch, dinner and late night indulgence, La Cave’s menu features an array of international influences and complements the selection of wine pairings perfectly. The menu is divided into categories based on the dish’s origin: From the Sea; Farm; Oven; Garden; Grill; and Butcher, and Cheeses from the Cow, Sheep or Goat. Flavorful flatbreads such as ham, egg and cheese flatbread with quail egg and Neuske bacon or prosciutto with caramelized onions and arugula are ideal for sharing, while such vegetable dishes as salt roasted beets with whipped goat cheese and pistachio entire meat and veggie lovers alike. Creative seafood dishes include chilled Taylor bay scallop with sea beans and mustard oil and hamachi with pickled chilies and candied lemon zest, while meat and poultry options, from a sliced sirloin steak with mushroom fondue and cippolini onions and stuffed chicken with prosciutto, celery root puree and lemon caper sauce, cater to a wide range of tastes. Dishes from the grill such as baked clams with pepperoncini and parmesan and irresistible Angus mini-burgers with mushroom and chipotle mayo further round out the menu and satisfy cravings. Guests may also select from a wide variety of meats and cheese to create their own charcuterie board.
Designed with 555 International, La Cave is comprised of three distinctly intimate spaces: “the cave”, main dining room and garden lounge. Guests are greeted by a glass entryway surrounded by rich wood panels engraved with the La Cave logo. The first room, aptly called the cave, features cobblewood oak flooring, low vaulted ceilings and an oversized sign made of red LED lights that reads In Vino Veritas. An arched steel-metal gate features Latin phrases celebrating food, wine, toasting and the arts, evoking the feeling of an exclusive wine cellar in Tuscany, while providing a glimpse into the main dining room. Spacious and low lit, the main dining room boasts a center bar outfitted in a herringbone pattern and bookmarked by two wine rooms. A ten person ‘share table’ features a walnut table perched atop two wine barrels that allows for intimate wine tastings and special events. Lastly, the garden lounge room recalls and oversized living room with mix-and-match custom made chairs and tables, at which guests can unwind with a glass of wine and small plates from the kitchen.
